my breakfast!

avocados......yum!


HERE'S WHAT YOU DO:
-cook an egg the way you want it (I fried mine in good ol' fashioned unsalted butter)
-meanwhile: toast your English muffin (I chose whole grain)
-cut up some avocado (yum!)
-add some cream cheese to your now toasted English muffin and done!

sausage and noodles...

Ingredients:
 - Fresh spinach
- yellow pepper cut into thick strips
- organic Italian sausage
- fettuccine noodles
- fresh garlic
- salt and pepper
 

What to do:
Cook the noodles.....

when the noodles are still warm, toss with roughly chopped spinach - and a bit of olive oil....

While they are cooking, saute garlic and yellow pepper for about 2-3minutes in large dutch oven
Add sausage and continue cooking until sausage is browned

done


even better in the summer when you can grill the peppers from your garden and grill the sausage too!
and of course the spinach can come from your garden....
and you can make the noodles....

really: you could stuff the sausage if you are willing!!
(I'm taking a class on that soon and I can't wait)

Homemade Granola...

One of my favorites, and the kids' too...

All ingredients are organic (including local honey)...and trust me on this, that it's better than any store bought granola...even the store bought organic kind!!

Enjoyed as a snack, while hiking, for a quick breakfast with milk, or with yogurt...

easy and good for you

Here's what you need: 

List of dry ingredients:
3 cups oats, uncooked
1/2 cup flaked coconut
1/2 cup sliced almonds
1/4 cup wheat germ
1/4 cup sunflower kernels


optional: coarsely chopped pecans (or walnuts, pine nuts, etc.)  2 cups 

combine in the big bowl... 

in a separate bowl, mix together the other ingredients:

List of other ingredients:
1/4 cup + 2 Tablespoons honey
1/4 cup pure vegetable oil
2 1/2 Tablespoons water
2 T. brown sugar
3/4 teaspoon pure vanilla extract
1/4 t. salt


Combine oat mixture and other ingredients together...

mix thoroughly...and preheat oven to 350*

my pan of choice...


pour your granola mixture onto pan(s)... 

Place in oven

Set timer for 25 minutes

Every 5 minutes stir your granola in the pan (being careful not to spill it!)
-the edges of the granola get brown more quickly...so make sure you mix it good-


how to store: 

I use an old glass container with screw top lid


how does Anne Marie like her granola right now?........a bit of organic yogurt, granola on top (heaven forbid you mix the granola into the yogurt) with raisins on the very tip top

sprucin' things up...

Spritz...



a holiday favorite here on the farm........using this antique contraption.....

It is awfully hard to find a Christmas cookie recipe that doesn't involve sprinkles with dye on them or in them

so I turned to the spritz cookie

Here's what you'll need:

You will need a cookie press of some kind.....maybe  your Mom even has hers still you could borrow!
Ingredients
  • 1 c. confectioners' sugar
  • 2 sticks unsalted butter
  • 1 egg
  • 1 tsp.
  • 1/2 tsp almond extract
  • 2 tsps. baking powder
  • 2 cups sifted flour
  • natural sugar crystals/sprinkles
Directions:
Preheat oven to 350 degrees F.
In a mixer with a paddle attachment, add the sugar and the butter. Mix until light and fluffy.

Add the egg, vanilla and almond extracts, and mix well.

Sift together the baking powder and the flour. Add to the flour mixture. Mix until combined.

when you "squeeze" the dough together, it should be sticking.......not crumbly........
Fill cookie press and attach desired motif.

Using a cookie press, press cookies onto ungreased cookie sheets, and sprinkle with sugar crystals
Bake for 5 to 8 minutes.....but do not let brown......

Let cool on wire racks......
